Fall is here. Winter is coming. Although it might sound like an oxymoron to plant vegetables at this time, trust us when we say that it’s a worthwhile investment. Not only is planting vegetables during the fall a great way to save money on your grocery bill down the road, but it’s also a great way to make your garden look nice and pretty all year around. With that being said, here are four vegetables to plant in fall for a spring harvest.
Considered one of easiest, cheapest vegetables to plant during the fall, garlic is a great addition to any fine garden or landscape during the wintertime.
To grow this delicious, healthy herb, all that you need to do is bury each clove about three inches deep(before the first frost date). After that, cover the clove with soil. From there, you can mulch it and watch as the stalks pop out from the winter ground.
Fun fact: Because of its antibacterial properties, garlic has been used for thousands of years to treat wounds and (most-recently) ward off mosquitos. In Old Anglo-Saxon English, its original name, garleac, literally translates to “spear-leek”, because its leaves look like flat, pointed spears.
So not only can consuming garlic help get rid of mosquitos in your yard during the summer, but it can also help you to get the stamina that you need to fight off the terrible winter flu when consumed with your grandmother’s famous chicken noodle soup.
A popular garnish to authentic Chinese dishes, next to garlic, scallions are one of the easiest vegetables to grow during the fall. They are also a great way to add some green to your winter wonderland garden.
Generally speaking, planting scallions is as simple as planting the seeds in rich, moist, organic, soil about ½ inch apart (approximately 1.27 centimeters) and covering them with 1 inch (approximately 2.54 centimeters) of soil. If you want to, you can even plant them either inside of a flower box or in a glass mason jar in the comfort of your very own home.

Peas and other Broad Beans
From edamame to your grandmother’s beloved peas, these types of greens are not only a healthy source of protein but also look great in your very own background. So if you want to create a winter wonderland fairy tale scene with these magical beans, simply plant the seeds 1 (approximately 2.54 centimeters) to 2 (approximately 5.08 centimeters) inches apart and watch them grow. If it helps, use a wooden rod and some cloth to keep the plants nice and straight during the cold winter months.
Anything that’s Leafy and Green
Whether it’s kale or spinach, there’s no doubt that growing some green vegetables during the fall time is a great way to help you lose weight by the time New Year’s rolls around. Plus, they make a beautiful addition to any winter garden available.
While there are many ways to plant leafy greens, generally speaking, all that you need to do is sow the seeds about ½ inch apart (approximately 1.27 centimeters) and cover them with 1 inch (approximately 2.54 centimeters) of well-drained, light, moist organic soil.
